This vegan mango ice cream method is made without an ice cream machine; instead, you need a large ice-cube tray or a wide container.
The mangoes that I used were really very sweet and a can of condensed milk was sufficient. If you find the mango puree and condensed milk mixture is not to your desired sweetness, add some sugar and whisk until it has dissolved. Instead of whipping the cream separately, whip the cream in a blender with the mango puree till soft peaks are formed. Then add the mango+condensed milk mixture. Add ½ teaspoon vanilla extract at this step. Then add the chopped mangoes in a blender or a bullet mixer.
Then pour this mango mixture into an airtight container. At this stage, pour 150 ml of chilled condensed milk into it and gently mix it with a spatula. Next blend them together to make a smooth mango puree. Alternatively, freeze in an ice cream machine according to instructions. 300 g sweet, ripe mango, cut into small cubes and freeze until completely frozen. You can add some mango pieces or nuts like pistachios, almonds or chocolate chips into the ice cream before freezing.
But I personally prefer whipping cream for the homemade mango ice cream. If you are a hardcore lover of mango flavour like me, then you can skip the flavouring agents from the recipe. Add ⅓ portion of whipped cream to the mango puree and condensed milk mixture and fold gently. The cream may deflate and your ice cream won’t be light and creamy. The cream may deflate and your ice cream won't be light and creamy. Add the mango flesh and all the remaining ingredients to a food processor and blend into a smooth, creamy mango puree.
Summers are here and beating the heat gets easier with some ice cream. All the mango lovers, it is time to relish and binge on the juicy, delicious mangoes. Nothing can beat the taste of creamy mango ice cream. But how about making it at home this time? No one can actually get enough of mango ice cream. Why buy just a scoop at the ice cream parlour when you can actually prepare a lot of it at home.
